I love it.......what a grand idea for JG. But, perhaps the doggie would be nibbling a bit, and he'd get home with no apples Oh how he would love those pierogis.....yep!

LOLOL!!! Great minds think alike...we're bringing a BIG cooler & some freezer pac thingies to bring LOTS 'O' pierogi & goodies back with us!!!

Didn't think about bringing up oranges....maybe 1 afternoon I could set up a "tailgate sale" in Wilkes-Barre & sell the oranges, bananas, coconuts, lemons & limes off my trees!!!

"hey Mr. tallymon...tally me banana...."

i have found that any time you microwave that kind of thing it has the consistancy of a tire....

Oh yeah...like eating a chocolate eraser.

There is this microwave cake recipe that Tupperware talks about...any boxed cake mix and a can of soda...the possibilites are endless....then nuke for 3 minutes .....I've had it...not really like an eraser...but not horrible either, might be good with a very large blob of ice cream.

Default Tangerine & Olive Oil Cake

My cousin brought over a piece of this cake she made & it was fantastic!!!

I asked for her recipe & thought I'd share with y'all....


2 tangerines
1/3 cup extra virgin olive oil
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
4 eggs
1 1/2 cups sugar
1 tsp vanilla

Confectioner's sugar


Grease a loaf or springform pan with olive oil.

Cut off the top & bottom part of the tangerines 'til you see the flesh, then cut the whole tangerines in chunks, remove all the seeds, & throw in a food processor (skin & all).

Process while adding all the olive oil 'til it forms a smooth "mushy" paste.

Sift the flour, baking soda, baking powder & salt together.

Beat the eggs 'til they are thick and mixed well, then slowly add sugar & vanilla . Gradually add the flour to the eggs mixture to mix it in slowly. (she says it is important not to over mix). In 3 separate stages, add in the tangerine mix and incorporate.

Again, do not over mix!!

Pour contents into the greased pan & bake in a 350 oven for 60 minutes 'til done.

When cool, sprinkle with confectioner's sugar.

Enjoy!!

My cousin says it tastes even better after a day or 2!!

Default Bajan Coconut Bread

Here's a recipe I found this morning from a friend in Barbados' mother...easy & OH so good!!!

Bajan Coconut Bread

3 cups flour
3/4 cup brown sugar
4 tsp baking powder
1 tsp salt
1/2 tsp cinnamon
1/8 tsp nutmeg
1 1/3 cups shredded coconut
1 1/2 cups milk
1 egg
2 tbsp vegetable oil
1 tsp vanilla extract


Preheat oven to 350.

Combine flour, sugar, baking powder, salt, cinnamon, nutmeg and coconut in a big bowl.
In another bowl, beat the milk, egg, oil and vanilla extract together 'til well blended.

Add the liquid mix to the dry mix & stir to blend. Don't over-mix. Pour batter into a loaf pan.

Bake for about an hour 'til a toothpick inserted into the center of the cake comes out clean.

Cool 10 minutes in the pan, then put the bread on a rack to finish cooling.

Enjoy!!
