I was born and raised in Dublin and Galway - never heard of cabbage and corn beef till I got here.

But if you like you can try my mashed spuds and Kale

Finely chop Kale and peel and square your spuds boil all together. Drain water and then add milk butter salt and pepper - if you like you can add finally chopped onions. We dont make them all creamy like you do here we like some substance.

Yummy

ALso chop carrots and turnips (think you call them rudabakers here) boil drain and smash together with lots of pepper butter and salt.

Here's 3 that I make. They're all vegetarian, but I guess you could add meat, poultry or shrimp to them...

Moroccan Stew

1 cup dried lentils
1 small butternut squash peeled & cubed
10 small red potatoes cubed
1 onion chopped
4 cloves garlic minced
2 cans diced tomatoes (don't drain out the liquid)
1 tbsp curry powder
1/2 tsp salt
1/2 tsp pepper
1/2 tsp crushed red pepper
2 cups water
1 pkg. frozen cut green beans

Put all the ingredients except green beans in your slow cooker. Cover and cook on low for 8 or so hours 'til the lentils squash & potatoes are tender. Increase heat to high setting. Add the green beans 15 minutes before you're going to shut off the crock pot so they will thaw & cook tender.
Serve over rice or couscous.

Greek Stew

2 cups butternut squash peeled & cubed
2 cups carrots chopped
2 onions chopped
1 cup chopped zucchini
2 cans diced tomatoes (don't drain the liquid)
1 large can garbanzo beans drained
1 can vegetable broth (or broth for which meat you're using)
2 cloves garlic minced
1 tsp cumin
1/2 tsp salt
1/2 tsp ground allspice
1/2 tsp pepper

Put all the ingredients in your crock pot & mix well to combine. Cover & cook on low for 7 or 8 hours.
Serve over couscous (or rice)
Sprinkle the top with crumbled feta cheese

Chickpea Curry

2 tbsp olive or canola oil
1 onion diced
2 cloves garlic minced
1 inch piece of ginger peeled & grated
1 tsp cumin
1 tsp ground coriander
1 tsp turmeric
1 tsp salt
1 large can chickpeas
1 can diced tomatoes (don't drain liquid)

Put the oil, onions, ginger, and garlic in a frying pan & saute for 5 minutes.
Put this mixture and all the rest of the ingredients in your crock pot.
Cook on low for 6-8 hours.

Can be served over rice or couscous.

You're welcome Mathjak!! Seems like I'm posting recipes 6-1 here don't it???

I gotta drag out the recipe for Macaroni Pie that I've been cooking for years & EVERYBODY asks me to make!! I got the recipe from a friend in Barbados' s mother who got it from her mother & so on... She told me that every Bajan family has a recipe for Macaroni Pie, but depending on the family they're all different!! It's not a "slow cooker" recipe, but it's SOOOO good!!!

LOL!!! I was running around all day & tomorrow morning we're driving up to Sebastian to see Mel Fisher's treasures he's brought up from the shipwrecks offshore, so I'll probably get a chance to post the recipe for ya tomorrow afternoon.....

It'll be worth the wait!!!

We sailed the BVI for two weeks last winter, and spent a couple of weeks on St. Thomas. I was surprised to see mac and cheese served so many places. Now I know why. It must have been macaroni pie!

It could well have been since Macaroni Pie is a form of mac & cheese!!

Well my partner was up all night sick, so I guess we're going nowhere today...so here's the recipe:

The 1 ingredient you might have trouble finding in NEPA is "Bajan Green Seasoning". I use an alternative here called "JCS Boston Jerk Seasoning" (which is basically the same mixture) that's in the grocery store in the "ethnic" section. I've seen it in the Stop & Shop in NY, so I'm guessing it's available in NEPA also. It comes in a glass jar like a jelly jar & is VERY hot, so if you use it on anything else BE CAREFUL!!

If you can't find it, you can make your own by throwing in a blender 1/4 cup olive oil, 3 scallions, 1/4 cup thyme, 2 cloves garlic, 1/4 cup vinegar, 1/2 a dill pickle & 2 habenaro peppers (seeded) & blending to a paste.

Bajan Macaroni Pie

1 box elbow macaroni
1 green & 1 red pepper diced
1 onion diced
1 pound shredded cheddar cheese
2 eggs
1/4 cup brown mustard (Gulden's should be fine)
1/2 cup mayonaisse (not Miracle Whip or any other "pseudo-mayonaisse")
2 cups milk
1 tbsp Bajan Green Seasoning
2 garlic cloves minced or crushed
1 tsp salt
1 tbsp pepper

Topping:
bread crumbs
butter

Cook the macaroni "al dente". While the macaroni's cooking, in a LARGE bowl beat the eggs with all other ingredients (except onion, cheese, topping & peppers) 'til combined into a "sauce". Add the onion, peppers & cheese & mix.

Drain the macaroni & run under cold water to cool. Throw the macaroni in the bowl with the liquid mixture & combine. Mixture should be "wet & loose". If not, add a bit more milk.

Pour the mixture into a greased lasagna pan & top with bread crumbs & pats of butter. Cover with foil & bake in a 350 oven for 35 minutes. Then remove the foil & bake an extra 10 minutes or so to brown the top.

Enjoy!!!

some very good recipes on here...I like the sound of the Greek Stew, although I'm a carnivore & I'd add meat.

Does anyone have any recipes for a cream of vegetable soup? I had it at the Stroudsmoor & it was yummy. I had only had cream of broccli or mushroom up to that point, but having many veggies in one cream soup was fantastic. Anyone?
