Bajan Pumpkin Soup
Now that there's a glut of pumpkins around, I thought I'd share a easy recipe from a friend in Barbados' mother for Pumpkin Soup.
In the islands, what they call "pumpkin" is actually a Calabaza squash (you see it in the "exotic" produce sections every now & then...) but I've substituted OUR pumpkin with almost exact results.
You'll need:
4 cups cooked mashed pumpkin pulp (or 2 cans unsweetened pumpkin)
1 cup cream or 1/2 & 1/2
1 box vegetable (or chicken) stock
1/4 stick butter-melted
1 hot pepper (de-seeded)
1/4 cup brown sugar
2 tbsp thyme
2 garlic cloves
1 tbsp black pepper
1 onion (cut in quarters)
If using fresh pumpkin cook in boiling water 'til done. Add to all other ingredients in a bowl or pot.
Using a blender, add 1/4 of the total mixture at a time & liquefy. Pour that into a saucepan & continue 'til all mixture is finished pureeing.
Put saucepan over med-low heat, bring to boil & simmer for 30 minutes.
Enjoy!!

Peanut Butter & Jelly Sandwich
- Place two slices of white, whole-wheat, or multi-grain bread flat upon a dish.
- Use a butterknife to carefully spread peanut butter along one side of each slice of bread.
- Wipe (or lick if you live alone) off the butterknife and insert into jelly jar. Slather on a generous amount of your choice of flavored jelly.
- Put covered sides of bread together to form a sandwich.
- Wash down with a glass of milk.
- Repeat if desired.

Urban Peanut Butter & Jelly Sandwich
1. Place two slices of gourmet hearth-baked foccaccia or panis bread (which MUST cost at LEAST $6.00 a loaf) flat upon a dish.
2. Use a Martha Stewart silver-plated scone knife to carefully spread organic unprocessed peanut butter along one side of each slice of gourmet bread.
3. Wipe knife off onto William-Sonoma brushed Egyptian cotton 600 thread-count towel (or throw away if you're even MORE urban).
4. Insert imported Sur Le Table jelly spoon into imported gourmet jelly jar. Slather on a generous amount of your choice of flavored imported gourmet jelly.
5. Put covered sides of bread together to form a sandwich while extending both pinkies & checking personal appearance in antique 17th-century Italian mirror.
6. Wash down with a glass of organic soymilk or Perrier.
Repeat if desired.

Easy Yummy Homemade "sghetti" sauce.
1 can whole peeled tomatoes (or 8 fresh ones, skinned and chopped)
6 tbsp Olive Oil
4 minced garlic cloves
1 tsp sugar
1/2 tbsp dried basil (1 tbsp chopped fresh basil)
salt and pepper to taste ( i use about 1 tsp salt and 1 tsp pepper - but you do what you like!)
4 heaping tbsp pecorino cheese (parm will do just fine as well!)
heat oil
add garlic til a little tan
add tomatoes, sugar, salt, pepper - stir
simmer 15 minutes
add basil
simmer 15 more minutes
sprinkle with pecornio
i find one can makes enough for about 3-4 people. the fresh tomatoes makes less.
everytime i make this, someone asks for the recipe, so i figured i would put it on here as well!

Ok Junge George....I tried this recipe...and I have to say...I'll eat ANYTHING chocolate...but this was YUCKY!!! Real Yucky. Kinda like chocolate rubber.

That sounds real, real, good...........I just bought peaches today.
You know what the cost was PER PEACH about $1.60 each. 
I just can't wrap my thoughts around that price...per peach!
