Good thoughts goin' up for you terrymetal! The local here says a high of 36/34 for Monday/Tuesday with a chance of some snow. However, we are in the snow belt. A few miles away may see nothing. It depends on where you are headed.

I have the bestest CC cookie recipe. When I was still working at school, one of the kids brought in some of her mom's cookies as a teacher gift. They were bangin'!! We explained to her that she needed to bring in the recipe, or we would cut off her pencil supply. Yes, she knew we were kidding, and we got the recipe.

Eggnog Custard Pie!!!

1 -9 inch unbaked piecrust

Filling:

2 cups eggnog
3 eggs
2 tablespoons brandy or rum (optional)
1 tsp vanilla extract
1/3 cup sugar
1/8 tsp salt ( just how many granules is that anyway??)
1/4 tsp nutmeg

Topping:

1 cup whipping cream
3 tablespoons confectioners' sugar
1 tsp brandy or rum or vanilla extract
nutmeg

1. Preheat over to 350 degrees. Prick holes in the bottom of the pie crust. Bake 15 minutes to partially cook.
2. To make filling, beat eggnog, eggs, brandy if using, and vanilla in large bowl. Add sugar, salt and nutmeg; mix well. Pour into piecrust.
3. Bake 25 minutes. Cover with foil and bake 30 - 40 minutes longer or until a knife inserted in the center comes out clean.
4. To make topping, beat whipping cream in a small bowl until soft peaks form. Add confectioners' sugar and brandy; beat until stiff peaks form. Garnish pie with whipped cream and sprinkle nutmeg.

In the picture it shows pretty little mounds of whipped cream that are piped all around edge of the pie and then 3 mounds in the middle so that some of the custard shows too.

I'm brining my turkey this year. This is actually my first Thanksgiving at the new house and the first one I've ever prepared. I am using Alton Brown's recipe from Good Eats on the food network. It has gotten rave reviews!

lialleycat, I'll post that recipe in the food thread later. I am cleaning the library, and I think Hercules had an easier job. I found that cookie recipe in an old book. That's what made me think of it.

Boy!!! No pierogi for George, cookies for Paul...... (sniff sniff )

Guess I'll just have to bake an eggnog pie & sit in the corner!!
