Anybody knows a good butcher that can cut odd/custom pieces of beef. I'm looking for an specific south american cut and latin markets or common american supermarkets do not have it.
I have a PDF specifying the cutting instructions, however the butcher shops I have visited told me they did not have the piece
Any info is appreciated.
