As an update to what actually happened, the empty stores became two mom-and-pop businesses, an optometrist shop and a hair stylist. So, interestingly, even though many people assume that all businesses in the burbs are chain stores the reality is the majority stores in this plaza are independent businesses.

The design of this shopping plaza hasn't changed much, although the outdoor dining area for the tavern was expanded a little.

Mokomandy also opened in the plaza--this is another independently owned business, a fusion restaurant serving cajun-Korean food. I think the food there is fantastic--if you want to try something completely different you should come check it out.
