Did you cube it into small pieces, maybe 1/2 inch by 1/2 inch. Yel, this woman was cooking for a crowd. I would use 1 potato each and 1/2 sweet potato, 1/4 onion for my crowd of two. You are doing the water correct. She didn't say how much oil, just a little. She also mixed them together because the sweet potato flavor, onions, etc. was throughout the recipe.

Here is a similiar recipe that looks good, but we can use the time on it and ROASTED SWEET AND WHITE POTATOES
1/4 c. each butter or olive oil 2 lb. each sweet potatoes and russet potatoes, peeled and cut into 1-inch chunk 1 lg. onion, cut into eights 8 cloves garlic, cut into halves 1/2 c. unsalted hazelnuts, coarsely chopped Put butter, oil, sweet potatoes, russet potatoes, onion and garlic in a 10 x 15 inch baking pan at least 2 inches deep. Spread vegetables evenly. Bake on bottom rack at 475 degrees for 30 minutes; stir with wide spatula after 15 minutes. Vegetables near rim of pan begin to brown quickly. If made ahead, remove from oven and let stand, uncovered, up to 4 hours. Mix nuts with potatoes; continue to bake and stir occasionally until potatoes are very tender when pierced and are tinged with brown, about 15 minutes (20 minutes if cooled). Makes 12 servings. For less fat use less oil or fat. |

Baked Yam and Potato Casserole
1 large sweet potato, thinly sliced 1 large potato, thinly sliced 1 onion, thinly sliced 4 tablespoons butter, divided salt and pepper to taste 2 tablespoons all-purpose flour 3/4 cup vegetable broth 1 cup shredded mozzarella cheese 2 tablespoons dry bread crumbs 1 tablespoon dried parsley (optional) DIRECTIONS: 1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish. 2. In the prepared dish, make a single layer of sweet potato slices. Place a few onion slices on top, dot with butter, and sprinkle with salt and pepper. Repeat, alternating layers of white and sweet potatoes. 3. In a small bowl, or measuring cup, combine flour and broth. Pour over potatoes. 4. Sprinkle cheese, bread crumbs and parsley over the potatoes. Dot with remaining butter. Cover. 5. Bake in preheated oven for 1 hour, or until potatoes and onions are soft. |

So, how did the potatoes turn out, Synopsis? I got way behind on this thread.

They turned out "okay." However, I rebaked them and they came out excellent. The main problem is that jessaka's recipe list did not include the oil, although it was mentioned in the instructions. So, I omitted the oil accidentally and they didn't come out as expected the first time. When I baked them the second time they were EXCELLENT!
