It does, doesn't it. I used to hate the slime too, but then I got some really good deep fried okra from a Church's drive in, and I love gumbo, so I guess my tastes just changed. I also really like pickled okra, all vinegary and no slime there, either.

Like I said, play with it.....broiled chicken, some firm tofu cubes, feta cheese, cubes of a sharp cheddar, Greek olives, prosciutto, salad shrimp.......all can add flavor, protein, character and variety.

Oh the pickled okra is pretty good in salads...we buy big jars of that

Grits, yes. Great with butter. I used to have a cookbook called White Trash Cooking - it should have been called Every Day Southern Cooking. Unfortunately, I lost it in a house fire. Also one called The Roadkill Cookbook. What can I say? I like weird cookbooks.
