Has anyone have an experience of starting the B&B and obtaining the documentation in Yamhill county? How hard it is? Getting a permit for airb&b (to do it legally as a business)? Any thoughts?

You just have to make sure you buy a property in the proper zoning for it.

One would think Yamhill county has more than enough B & B's, no?

If you use an assumed business name you have to register that name with the Secretary of State.

Oregon Secretary of State: Register a Business

You have to be licensed by the state.

As Silverfall mentioned, you will not get a state license without being in an appropriate zone. Talk to city or county planners while choosing your location.

You will have to have a licensed commercial kitchen. That is commonly handled through the County Health Department.

Regarding the kitchen, I'm fairly certain you need a separate kitchen for guests food preparation as they no longer allow you to dedicate certain hours to business and personal. It may be a county rule I'm recalling and it wasn't so Yamhill, you should check with the local inspectors.
