Ashland tends to have some of the best restaurants in the valley, followed by Jacksonville. This is due mainly to the tourism in the towns. Here are places in Ashland:
Steak: Beasy's people seem to really like (not a big steak eater myself)
Pizza: Great American Pizza Company - GREAT pizza. Not a chain and all fresh ingredients.
Chinese: Alas - I would say that I have yet to have yet to find really good Chinese. What I have had is just "ok", but I also lived in San Francsico for 9 years where the food is amazingly good, so my standards are a bit high.
Flea markets - you might find some happening around Jacksonville, Central Point, White City, and Medford. Ashland has second hand stores instead and Jacksonville has more antique stores.
Skateboard park! Again, I have to direct you to Ashland. They have a great skate park. When you are downtown there will be a street called "Water", that is on other other side of the Plaza. One way to find it is to look for Deeps Indian Cuizine - that is the street it is on. You head down that street and there will be a tunnel that goes under the tracks. Go through the tunnel and look to your right - the park will be coming up.
As mentioned, Ashland has a huge theater thing going on, but it also has Litha Park. It is a huge park and fun to hang out in. You'll find lots of things to do there.
Finally, if your here during the summer and happen to be around on the 4th of July, again check out Ashland. The town goes nuts closing down the downtown and they must have the longest parade possible for a town of this size (seems to go on for about 2-3 hours). Tons of fun booths for food/gifts, things happening in the park everywhere, and fireworks (not big-city quality) at night. Makes for a great visit.

Thank you
