There comes a point in most jobs to where that becomes ridiculous. We all speak two languages, we all can crank out 500 hot dogs per hour. I mean what more do they want, blood? I don't know what's better, to be hispanic and be bilingual or to be white and bilingual. You're right, here most of us are bilingual. Here's the deal if you're average and "older" it doesn't matter whether you're hispanic or white for any reason. So who cares if there are more hispanics than whites. There we are all in the same boat. I just remember the old saying, "on the internet nobody knows you're a dog."

Something that makes you stand out doesn't neccessarily mean a PHD from MIT in nuclear physics. But let's take your hot dog job for example. If you've never worked in fast food or beverages you're not going to get hired. You might just be overqualified. If you've spent most of your working career in office positions no one is going to hire to sell hot dogs knowing that as soon as you find a new office job you will leave the hot dogs to sell themselves. Not every job, even the easy ones, are for everybody.
