I don't believe UCF brings alot of diversity in "things to do" to the area. UCF isn't really an arts school and most of the students there seem more interested in drinking and going to movies and chain restaurants. I guess they do bring some stuff in, if Moe's Southwestern Grill tickles your fancy (I think the food is overpriced).
There are some good things in Oviedo, though, it isn't all bad. There are some family-run restaurants in downtown Oviedo like the Oviedo Diner, the Town House, and also on Lockwood there's an Italian restaurant that is very good. So there are a few good places besides the overpriced chains to eat at.

Right across Alafaya from UCF on both sides of university are a ton of non-chain restaurants. You'll see non-chain Mexican, Indian, Middle Eastern, Jamaican, Thai, and a lot of pizza places. There is indeed a coffee shop too with a hookah bar in it as well. Yes there is one Moe's sitting there, but you haven't really looked at what's around you have you? That's just one place on a huge street. UCF also now has a new area of shops on its northeast side that is a walking district with streetside outdoor seating, etc.
The idea that you need to have an "arts school" to have anything cool pop up near a university is certainly off-base. Young people naturally want things to do, and businesses pop up to capitalize on that. It happens around every university, and the bigger the university the more it happens.
As usual you exagerated the state of things around you to make them sound bad. I hope people don't make decisions based on your exagerated negativity.
