The economy supports what the consumer demands, however, when there is a shortage of an available service the fee for that service increases.

Noted. The 20-25% who earn more than $100k a year is a number based on the nation as a whole.

I agree, that there really isnt many jobs that pay very well that are in the "nobody wants to do" category.

No, just anyone with a HS dipolma is able to earn $100k a year but if a person has enough drive and determination they can do it. You need to be a well rounded, fearless and dedicated to the vehicle that will get you there. Landscaper, HVAC mechanic, imported vehicle repair expert, even a lawn sprinkler company can be very lucrative.

The idea is to be able to perform an in demand service not only cheaper than the competition but perform it better than the competition.

It will support the people that work the hardest and do the best job.

Meanwhile, those STEM careers we push so hard to train people for in school (K through college) can be outsourced to India in a heartbeat. You may even have to train your replacements like a local company is accused of doing.

You can't send your car to Asia for repair.
