There are a couple condos in/around Dr. Phillips that are around $1,300-1,400 for a 2/2. You'd have to pay utilities, but it would be cheap. You could also look into Hunters Creek, but Dr. Phillips would be my choice because it is very nice.

The Sanctuary at Bay Hill is a nice condo community in Dr. Phillips. They don't have any condos for rent, but they constantly pop up, so one should come up soon I imagine. They usually go from $1300-1400 for 2/2.

Another option would be a unit in this community...

You'll definitely want something closer to work and where housing is more affordable as Seminole County tends more expensive and less accessible to the touristy areas where much of the "growth" is taking place in the area.
