I am 25% Ashkenazi on my mother's side, so by Jewish law that technically makes me 100% Jewish even though 75% of my ancestors are Gentiles.

Only if you can trace it through the maternal line. If your mother's mother's mother's mother's mother's mother etc. was Jewish, then you are too. But if your mother's grandfather was Jewish and all of her other ancestors were gentiles, then you are not Jewish. All four of my grandparents were Jewish, mom's parents were Holocaust survivors.
