It sounds to me as though the OP and his/her parents didn't have a very good relationship to begin with, if the mere presence of a hamster is enough for the parents to threaten eviction and the OP to threaten a lawsuit.
Please, OP, for your sake and for the safety of the hamster, move out.

I just think it's beyond strange that a 27yo girl is so over the moon about a rodent that she's willing to sue her parents over it.

Sorry, but your mom can't just kick you out. You pay rent which makes you a tenant. She would have to go to court and legally evict you. This hamster is the sign of a much larger problem in your family. If you're paying $500 a month in rent to your parents, why not just get your own apartment? Or find a place looking for a roommate?
As for the hamster, call your coworker and tell her she needs to take the hamster back. Give her a deadline and if she doesn't take it back, then contact a local animal rescue/humane society so you can drop it off.
