How about what constitutes the perfect cheesesteak?
Here's my perfect cheesesteak. Chewy roll. Chopped steak( not steak umms) fried on the grill with sweet white onions, then steam them to keep everything soft and moist and to have the flavors ( and grease) blend. Add some provolone and melt it in, then place it heaping in the roll. Then top off with a generous amount of sauce on top.
V and S in Reading is about as close as they come to perfect. And with Icy Tea for your beverage and some fries and that's heaven.

The roll is key - not real soft but not super hard and crusty either. I agree - with the chopped steak - onions and cheese (provolone - no wiz) chopped right in with the steak. Keep the grease to a minimum. That's it. No sauce (or do you mean gravy) for me. And don't ruin it with ketchup.

I know gravy is a commonly used term for tomato sauce, pizza sauce, marinara sauce, etc. A steak sandwich is just too dry IMO without sauce. The only thing worse than ruining a steak with ketchup is by putting mayo on it. :P

Italian Kitchen on Baltimore Ave. in Southwest Phila has the best steaks and hoagies overflowing with either steak or lunchmeat. And BTW, they use real cheese, not that cheeze whiz crap on their steaks.

I also love GENO'S in South Philly
Merlino's use to be my favorite hoagie spot...I wonder if they're still in business, they we're located in South Philly too

There's a place in Flourtown, on Bethlehem Pike about 3/4 to a mile from the city limits. It's called Cisco's. It's a dark little bar that's been there forever. I've been to many steak shops and I'd have to say they make one of the best cheesesteaks I've ever had. It's the fried onions and gristle that do it every time.
