Default Philly cneese steak..why so difficult to get outside of Philly?

Its so easy to make, I was in NYC couple of weeks ago, I decide to order Philly cheese steak and they brought me a slab of meat on a roll.WTF!!
That ain't no Philly cheese steak. He insisted it was.
And what is "Philly BBQ chicken?" saw advertised in NYC.
Anyway, I like pork sandwich better,just hard to find.

I have a craving for some authentic Spanish paella. I haven't had one since my favorite Spanish restaurant on South Street closed down a year or so ag. Where can I get some?

From my experience you'll find much better cheesesteaks away from the tourist traps(Pats-Geno's- Jims etc) Your average pizza shop in the city makes a much superior cheesesteak than the "steak traps" which dont have the time or patience to make a good quality steak.For a really good steak go out into the suburbs and find a sandwich shop, it puts Pats or Genos to absolute shame.

For cheesesteaks -- it's all about the roll. It needs to be soft, yet not spongy on the inside and crispy on the outside.

True about the rolls newmarlig it is a huge ingredient. However you cant use slabs of gristled meat that taste like shoe leather which I got the one time I was at one of the tourist traps. The trick for me is chopping the sirloin up into tiny morsels which along with the cheese melts in your mouth.

Yep, you can't get good cheesesteak rolls outside of Philly and they usually don't know which meat to get or how to cook it. A slab of beef with cheese on a dinner roll is NOT a cheesesteak.

You might be right. I'm not impressed with Pat's or Geno's. Some places chop the meat too fine.
