I think (as much as I hate to see crooks get away with things like this) you've made the right decision. You've received sage advice from some very wise and knowledgeable posters. There's one possible upside, the renter said it'd be paid eventually right?
I'd suggest you don't let the renter know you're going to let it go. Send a bill from time to time or a letter requesting payment. Maybe "eventually" will finally come? If not you've at least reminded this person of their bad deed and wasted only a stamp.

Was there something in the month-to-month agreement that stated if you got married (why would this require an eviction anyway?) that the month-to-month would no longer be available? You get evicted when you break a contract agreement. You getting married doesn't sound like one unless you literally put that in the contract. While you may legally be in the right here, it sounds like you put that person through some hardship because of a personal decision of yours and w/o proper documentation of the contract on your end, it sounds like your ex-tenant has plenty of ammo to win. Just not worth $1000. If they can't afford your 1k what makes you think you would have gotten 1k+legal fees? If anything it sounds like your ex-tenant has a lesson to learn from this experience as well.

Month-to-month usually means EITHER party can end the contract for any reason or no reason, with one month's notice.
