We're staying at a motel near Dobson Ranch, so are there any pleasant parks or walking trails nearby? We need some exercise

Dobson Ranch itself looks nice, but it's private property right? Looking at google maps on satellite view reveals some green areas nearby, but it's not clear exactly what's there.....

I believe the canal has a lighted walking trail. Not very green though.

Maybe drive in to Tempe Town Lake for a walk and dinner?

Drive down Baseline Rd to Kiwanis Park in Tempe. Not far from Dobson Ranch. It's a bit greener, with some hills and a lake to walk around. Then you can go on down to South Mountain Park. Take plenty of water with you, make sure you drink plenty before you go.
