I'll second Ghost Town just past Apache Junction. That place is cool.
Then you can continue driving down Rte. 88 (Apache Trail) through the mountains past Canyon Lake. That drive is awesome.

i'd probably recommend driving up south mountain as well - great view of your soon to be home and some trails to do some light hiking as well

We usually just drive around. I've been here so long now but I think when we first moved here we did take people to South Mountain and Saquaro Lake.

Tempe was a good suggestion, Tempe town lakes and Mill Ave. Cave Creek sounds like a good suggestion as well. Canyon Lake, Tortilla Flats etc.

Your coming to Arizona, that pretty much means you have to eat some good Mexican food, I recommend Carolina's in downtown phoenix, its a dump, but some good Mexican food, and you can buy a couple dozen tortillas to take home, the best tortilla's i have ever had.

IMO once you eat Mexican food in Arizona, it pretty much sucks anywhere else, even Taco bells aren't the same.
