Without knowing where in Texas you are coming from and where in California you are going, you have two choices if you want to travel through Arizona: I-40 and I-10.
I assume you want to travel I-40 because you are coming from DFW and going to Bakersfield.
I-40 from Texas through Arizona will have steeper grades, particularly in New Mexico, than I-10. But once you get to California you'll find I-10 (and later, I-15) has steeper grades than I-40. So overall I'd say it's probably a wash and you'll just want to travel the shortest route. Also, something to think about, is you probably want to avoid the traffic in Phoenix and L.A. that I-10 would take you through.
Another thing to consider is you'll be traveling through some areas known for very high winds (either route). Keep that in mind when loading down your Chevy.
Good luck!
