A good, relatively inexpensive, all around camera. (Canon, Fujifilm, DSLR)

I've been getting by on combination of my worn out, Casio Exilim EX S10; my Galaxy S5 camera; and of course my GoPro H2.
While all of these work quite well for what I need them for, I still want to be able to take more interesting shots of things.
The GoPro's obviously good enough for the videos I need to take, but the other two have their varying limitations.
My Casio takes some satisfactory night shots, but nowhere near as nice as some other pictures I've seen taken with different cameras.
I've been going through the different reviews and reads for cameras in the $400-$900 range and would prefer to just stick to a $600 pricetag if anything could be had for that.
I've seen people I've known in the past using Nikon D50s and a similar looking Canon variant that were around this price range.
Of course this was in '07-'08 and I'm quite sure there's some later equivalent that has taken their place.
I consider myself more of an amateur/hobbyist/scrap-book type of photographer that wants an all-around camera that can take some quality shots.
What would any of you recommend for a step-up from the "point and shoot" level?
You can get this with the 18-55 kit lens in your price range. The D7100/D7200 is still considered one of the top of the line DX format camera's. The D7000 is just a step below.

I see the link says used, it's refurbished.
Sounds nice.
I'll keep this one in mind, but also try to go for something with a lens already included.

I have a Nikon D5100 that I hardly ever use in favor of my Panasonic Lumix FZ200. It's a bridge camera so a step up from a point-and-shoot. The zoom range is adequate for me though not as long as some of the newer cameras. It has lots of settings that can help with creativity and getting the best shot you can.
The best part for me is that it has a Leica lens with an F2.8 throughout the length of the zoom. Gets great pics in low light, and the battery seems to last quite well. I love it. Was even thinking of buying another for back up in case this one dies.

We have a Canon T3i and a Panasonic Lumix FZ200. The Canon T3i can produce better pictures and video but the Lumix FZ200 produces good video and pictures under various conditions... The FZ200 is easier to use, smaller and was less expensive.
All of the video portions in this video were shot with the Lumix FZ200. The stills portions were a combination of the Lumix FZ200 and the Canon T3i:
And we also carry a pocket size, $95.00 Canon A1400 Canon U.S.A. : Consumer & Home Office : PowerShot A1400 for those situations where a large camera just won't work. We used the Canon A1400 to create this "family" video. Not the greatest, but it was that or nothing...
There are a lot of options and it depends on what will really work for you...
