Waffles, and burgers come to mind. And of course upscale pizza has been a thing for decades, although pizza is arguably still semi "ethnic."

I could see the waffle thing going out of style in a few years (that Waffles place on Carson is just okish). Pittsburgh doesn't seem to have been hit with the artisan pickle and gourmet grilled cheese fads yet thankfully.

While we're on the topic of burgers, you have to realize that outside of fast food joints burgers are moderately priced items. The things fast food places sell barely resemble food and the burger is staple of American food culture. The fact that BRGR and other places are successful isn't really surprising, but I doubt it will last forever.

The Yard does gourmet grilled cheese. I haven't tried them, but I know that is one of their things.

Huh, interesting. I'll have to try it out of pure curiosity.

Also, Kevin Sousa is giving up ownership of Union too. I wouldn't be surprised if that goes away too, it's basically decent BBQ at 3x the price you'd pay down south (or at Showcase just a short drive away).

I eat at Franktuary pretty often FWIW. I'd never get a veggie dog there though, because even if done well, the concept of a hot dog is unappealing to me - it was even when I was a child and ate meat. I just go there for the salads, beetballs, chili, and chickpea fries. So while Station Street did carry some sort of veggie dog, I didn't see any reason to check it out.

More on point, man Kevin Sousa is taking a big risk here with Superior Motors. One could argue it's a repeat of the Station Street experience, insofar as he's putting his restaurant somewhere very few people would go unless they were actually on an expedition to find it. Braddock is arguably further out of the way, because while a single accidental turn can get you to Station Street, you need to go quite out of your way to hit Braddock. Hopefully he's got his plan together here.
