This isn't a flame, but when the Pittsburgh Symphony covers Aaron Copeland (or Pink Floyd), is it not music or art?
When Six Pence None the Richer covers The La's "There She Goes" is not music?
I would agree that attempts to sound like the original are rarely as good and most often horrible. But sometimes good riffs are actually more popular and better produced than the originals. In fact, there is more to a song than the composition. The execution and the production go along way to making the difference between the song being heard by a few and the song topping the charts.
There is also a lot of "original" music going around that has clear influences from prior work and a lot which is passable listening or dance music but completely forgettable, otherwise. There are some very talented local musicians playing uninspired original compositions.

Aaron Copland was a composer, not a musician (in that way, at least) He wrote and arranged music to be played by an orchestra, which is different than taking music written and performed by an artist and copying it note for note. So yeah, a bunch of guys who are profiting off of the entire Journey catalog aren't exactly in the same category as a band who's writing and performing their own stuff.

Actually, he also conducted, which means that he performed. Also, there were variations on his arrangements and, in fact, many of his compositions took their themes from prior works of art.
If you are a musician you know that there is no such thing as playing a composition "note for note". Everytime you play it there are slight variations. When those variations result in the work being heard in a different light, then you have a creative act.
Robby Krieger's (the Doors) "Light My Fire" was written in 1966 and hit #1 for three weeks on the Billboard's top 100 when the Doors performed it. In 1969 Jose Feliciano won a Grammy for his "cover" which peaked at #3. Interestingly, the song was heavily influenced by a John Coltrane cover of "My Favorite Things" (you know, "The Sound of Music"). Massive Attack, who wrote the song the instrumental parts of which are the theme song for "House, MD" (in the US), also used it (actually a sample from another cover).
I've already stated that trying to look and feel like the original artist is more of a tribute than an active of creativity (unless Weird Al does it).
But that doesn't make original works either better than or even as good as covers when many simply aren't.
By the way, Krieger paid a tribute to Feliciano's cover (stating that he owed a big debt to him), because Feliciano's cover opened up the song to many others. Most composers and artists appreciate good covers when those covers expose elements of the song that the original artist had not imagined.
