Not venturing off with a man for a long period of time doesn't make one not bisexual. A bisexual is someone who experiences attraction to both sexes, however, it's rarely 50/50. Someone who primarily prefers one sex, but incidentally has attractions to the other, is still by definition bisexual.
Women have a higher incidence of bisexuality than men it would seem. Your anecdote in no way indicates she chose to change her attractions. If she had romantic/sexual relations with both sexes, she's bisexual. She may prefer women, and only incidentally is attracted to men, but she's still bisexual.
You can't choose who you're attracted to. It's not a voluntary process.
