You're kind of missing the point. As you know, the Bible has been massively edited as to what texts were to be included (and excluded). Catholics include the Apocrypha as canon, Protestants (generally) do not, Coptic Bibles differ from the KJV etc. etc.
The problem raised isn't so much the faithful copying of individual texts, it's what texts actually constitute the Bible.

Actually, it has. Does your Bible come with the Apocrypha? Probably not. Because it was decided to change the KJV Bible back in the 17th century. (Not the only editorial decision, either.)
Now, you can of course make the argument that the Bible hasn't changed because anything different from your faith's preferred version isn't a True Bible. That's fallacious, of course, but can't very well be argued against.
