I read all these forums and so many people saying to others "oh your young, go for it!" or "well your not really young anymore" etc etc. So in societies eyes, what is young? What is middle aged? And so on.
I consider myself middle-aged at 37, even though my mind is 20.
I'm really curious to know how ages are determined. All I know is that now when I'm adding my DOB online I have to scroll down a lot further than I used to to find 1976.

You're still young. Figure 45 -65 middle age. You should be climbing mountains and jumping out of airplanes...before breakfast!
That's pretty bad advice if you want to live long enough not be young anymore. At 70, I could endorse the idea of being as sure as you can be of hanging around for the Third Act. It's where all the good stuff is.
Meanwhile, these age things are driven by societal norms. 16 used to be old enough, but with all the extra schooling needed to master expanding bodies of knowledge, Phase-1 extends for a lot of people to age 30. Still, the working years today are pretty much 25-64 and those years come in the middle, so 0-24 might be young, while 65 and up might be old. These three main phases are each split into sub-phases of course, but those three would be close to the major groupings.

Why? I did those things when I was younger and lived to be a senior. Just have to be careful. Oh, and I have to admit it wasn't before breakfast.

Lots of people who share needles and have unprotected sex never get AIDS. Want to jump on that? Risky behaviors are called that because they carry risk. Different people have different tolerances for risk. Dead poeple of course just don't care about it.
At 37 you're not middle-aged yet. Middle age used to be considered to begin at 40. But "old age" seems to be getting pushed farther back, so maybe as someone posted above, middle age now doesn't begin until 45, maybe 50. Whatever. But 30's is still "young".
