Why is it unhealthy? And you received your Degree in Nutrition from what university?
Nutritionist generally frown on lots of fried foods. Collard greens southern style often contain lots of saturated fats (ham hocks, bacon grease) and salt. Just seems kind of heavy for lunch. Generally business strive for healthy eating, being health conscious in general since they generally pay or match your health insurance premium.
I didn't realize one needed a degree in nutrition to distinguish healthy from not so healthy foods. No wonder we have an obesity problem.

I don't think that the OP mentioned what was on the menu. Where are you getting the lunch items from to make this comment?

That's not "Black" food per se, it's Southern food. The same food my White grandparents ate in rural Kentucky. Black Americans mostly have long roots in the South and took that food (which itself has roots in Africa, Europe, and Native America) with them wherever they went.

Yes he did, in the first sentence. Collards, fried chicken, grits and fried catfish. Every stereotype but chitlins and watermelon. Well, no macaroni and cheese now that I think of it.
