I've noticed that some people will just hand the server their credit card, with its numbers, expiration and those numbers on the back, the server goes out of sight, and then five minutes later they're back. It seems really risky and naive to just trust a random server at a restaurant with all that information and think there aren't at least some who would use that information fraudulently later on.
I've had people use my credit car number fraudulently twice before in the past. One time, I caught it. The other time, the credit card company caught it.

Both times the credit card company instantly credited me the money, so it's not a big deal.

I agree that you should at least glance at the check to make sure it is in the right ballpark at the very least.

Well, it is recommended that you always check your statements and do so regularly. I check my activity about 3-4 times a week online. I've only had to report one suspicious activity event in my ~14 years of using credit cards, and it was remedied immediately.

There is certainly a risk, but I think it is overblown as long as you are careful with how you use it and monitor your account.
