It's a fact that a lot of important stuff will be left out. There's just not enough time. Also - let's face it - the more dramatic episodes are the ones that will interest the kids and hopefully stick in their memory. If they act as a framework, the kids can sorta fill in the gaps as they (hopefully) read and learn more.

I don't recall which scientist it was who came up with the "lies we tell children" moniker - representations of reality that aren't exact, but good enough placeholders. And that's the best we can do in most respects.

(Now imagine being a European history teacher. My country has about 1200 years of recorded history - and most of it makes no goddamn sense unless taught in a context that involves most European history. It's daunting.)

Indeed. Children need to be taught that the world was created 10,000 years ago and that Adam and Eve were real people.

Even if you did so, you'd still have to make choices about what to cover and what not to cover. There simply isn't time to address every historical event in U.S. and world history by the time a child graduates from high school.
