I doubt the fajitas were delivered every day of the year. More likely they were delivered every week or maybe every other week because those institutions have a rotating menu. But how did he purloin this huge delivery and finish his shift without anyone getting suspicious? Maybe he just took a long lunch break Also, how much did he sell these things for? I'm not sure if institutional food has improved any tastewise, but it used to be pretty bland and terrible. Did he add spices? Or just give his customers a "mediocre flavor" discount? The man admitted in court he stole them and resold them, so that's actually what he did with them. He did not eat them personally.
These places also have surveillance cams everywhere, so Im not sure how he managed to unload the boxes and transfer them to his vehicle for that many years without anyone seeing him do it.
Im not sure I believe the numbers they quoted either, if he made $1.2M in 9 years from just re-selling fajitas, that would be around $2600 per week, every single week for 9 yrs, either he was taking semi truck loads of fajitas or something is off.

Ok, a $2600. load of fajitas per week is a pretty large load ( semi truck load maybe?)
