It proves no such thing. You have the ability to write books and are allowed to do so. Does this mean you get to go to any publisher/content platform and demand they let you do it? Nope.
Yes, a publisher edits and selects. The protections a content provider have, do not apply to a content publisher. Content providers cannot censor or remove content as an open public communications platform. That is how they get the federal protection.
You sue the individual for libel, not the content provider.

A book or paper publisher selects the articles that it wants to publish. That's entirely different from social media that lets everyone publish and then selects what people it wants to censor.
