I've always said "Merry Christmas" because, well, it's Christmas after all...but a few years back while working at a pizza place, I made the mistake of saying 'Merry Christmas" to a Muslim male, who got highly offended, jabbed his finger in my chest, threatened to sue me, called my manager and complained, and had me fired. Now, I'm very cautious who I use that term with-I typically tell people to 'have a nice holiday'-gotta be PC and not p*** anyone off!!!

Hopefully, you retaliated with "assault and battery" charges, filed a complaint with the EOC. And called Immigration....

That sucks to high heaven. They would've been firing me for other reasons besides using the wrong holiday greeting. Was that job in Dearborn by any chance?

I'm probably missing one or two... so feel free to add to the list.
So, since some people celebrate some or all of the holidays, saying "Happy Holidays" covers everybody who celebrates any or all of the above.

Exactly. Christianity doesn't have a monopoly on the holidays, so we shouldn't treat it like such, irregardless of what the majority of the people follow. We are not a Christian nation, and we should not cater to ANY religion over another.
