I have a dehumidifyer in my house and it works very well. I think you need to contact an AC company about that. The one I have came with the house. I have had my house set on 81 for almost a year now and have only had to lower the temp to 79 a couple of times. Some people think they don't work but I can tell you it makes my house very comfortable.

If you really want to go high Tech you can install web cameras in your house viewing a thermometer and a humidity guage and get one of those phone in remote controls for your AC. When you see either getting too high you can lower or raise the temp.

What I would do is get a company to go and check the house periodically. They should be available through a real estate broker and I don't think they are that expensive. I was at a trade show about a month ago in PSL and there were even people there who have a service to put your shutters up and take them down if you are out of town. Just make sure they are bonded.
