I really appreciate all these suggestions, and will return to this post in the future whenever I need storage in the Portland area. I think there must be a regional difference with self-storage out there because here the package receiving feature I describe is quite common and free of charge, and there is no need to get a second party involved as "movers."
What I've decided to do for now is modify our plans so that we can store our boxes with someone back east, who can ship them directly to us after we find an apartment. This provides us with a number of advantages and saves us money, plus we kind of wanted an excuse to visit the folks we'll be storing our stuff with anyway. So in the end this will be a win-win.
