Default Interesting restaurants in Portland.

I am interesting in coming to Portland in January. My main objective is to visit restaurants. I am dedicated and passionate about organic, seasonal and well done food. I am not easily impresed by 'chic' restaurants, prefer good food with good wine. Since I have been hearing so much about how much portlanders are involved in organic community I would like to know some suggestions. Thanks for any info.

although "seasonal" is not at a peak in January.

I would have to agree with Higgins. Greg is a leader in the movement of farm to fork, he is commited to quality food, good cooking techniques and support for the local guys. His place is a little upscale...but you should enjoy.
Paleys Place and Wildwood are two other places where the chefs really "get it" about the foods that are available locally...also kinda upscale...but quickly in Portland you will discover that everyone is welcome as long as they are well behaved. Bon Voyage....

I just went to a wonderful little place with some friends on Belmont St. (Southeast) called Tao of Tea. I thought it would just serve tea, but also serves asian food, not sure if organic but would not be surprised. You might check into it. Was a very nice experience, charming with bamboo and waterfalls, etc. Service was great too.
