Traditionally, french fries, cheese curds and brown gravy. Sausage gravy can be a substitute, and the cheese curds can be replaced with cheddar.

Of course this being Portland... we like to throw other stuff in there too.

There's pretty good poutine at the Original down on NW 6th. Potato Champion cart is decent if you don't mind getting it to go or eating outside.

Violetta makes a nice version. They have a chunky blue cheese sauce they use. Based on the name on the menu, I assume it's made with Rogue Valley Creamery's Oregonzola Blue Cheese (http://www.roguecreamery.com/product.asp?specific=109 - broken link). Which for my money is only second to their Rogue Valley Blue (http://www.roguecreamery.com/product.asp?specific=250 - broken link), wrapped in grape leaves soaked in Clear Creek Distillery's Pear Brandy.
