If you are UK citizens, it's unlikely you will be able to just come to the USA, get jobs and stay. You need to look up info about immigration and work visas. It's not easy, and given your work experiences, highly unlikely.

If you are US citizens, still probably pretty difficult. Housing is very expensive here and the jobs you describe are not high paying.

Do lots of research and get a realistic picture of your prospects.

I knew many undocumented UK citizens living illegally in NYC because there are millions of people and there are communities set up in the city which will employ. Most American cities are too small and it’s harder to go unnoticed. Sorry, but unless you marry an American I think your chances are extremely low.

I know that, I'm not running away to the us. Ive got that all info and research going on, my job earns near $58000 per year if I get the right company or even better on a transfer with my work, I know a few people in Portland but just got curious. We are aiming for next 2 years and hopefully have a citizenship and work sorted before going over, these question we more of a worst case scenario.

You could easily move to Vancouver, BC and enjoy similar ambiance.
