Drive over to Albuquerque, North from there to Farmington, clip the SE corner of Colorado, and head into Utah thru Moab. Then head towards SLC, then north on I-15 to I-84 in north Utah into Idaho. I-84 will take you all the way into Portland. Plenty of opportunities for interesting stops and side trips.

Lots to see, various routes to enjoy.

I would make a loop (Route depends on your specific dates and local events and weather timing).

If you are in a hurry... There is plenty of boring stuff that you can drive at night (as in most of Texas, KS, NV, & some of CO, NM, WY, UT, OR)
