There seems to be a lot of forgetting, here, that there is an emotional component to sex (at least for people who are not seriously mentally ill). In my experience, men express love through sex. And as a happy recipient of three-decades-worth of that kind of love, I am not complaining.
Heaven knows, I've observed such interactions between others. As a child (hiding under our shack, peeping through 'my special knothole in the floor'), I watched my Mother with her Johns, countless times, and saw those men giving her far more love and tenderness than merited by her demeanor or the situation.
Women & men don't smell the same. I don't mean their hygiene products, I mean their bodies. Pheromones are different too. Men's bodies feel hard, even the fat ones. Women's feel soft, even the athletic ones.
Our voices differ. Hearing a man's voice & moaning, I don't imagine would be helpful to a straight man.
As for the Craig's list ads, a lot of gay men have a "straight" man fetish, so many gay & bi men put up ads like that. Also, many gays are closeted, some have a hard time accepting the truth even to themselves. That type of man puts ads like that up as well.

Yes it is quite possible men claiming to be straight on craigslist are in fact closeted gay men. And perhaps not even admitting their gayness to themselves. Gay men refer to these men as "straight to bed"!
To me the real test is who they are attracted to - who they are "checking out" or "looking at". Their eyes tell all! So watch men's eyes at the store and see who they are looking at.
Another clue is what naughty pictures/magazines/videos they prefer to look at. If just women in the pictures or just men in the pictures, then that is a good clue. If mixed women/men, then that would not be very definitive.

I've not read much about the sheep thing and have no idea how common that would be? I have heard stories about teenage farm boys and so forth. But being as sheep don't talk, I guess we will never know the truth about these things!
My favorite story is about a teenager who was "doing" a cow. The cow apparently liked it, so started backing up. But backed the teenager into a fence with a nail sticking out (poked him in his back). So he started screaming for help and his mom came out and saw him there with his pants down, etc.
I don't know if that is a true story or not?
Anyway most farm boys wind up getting married to women, so I would assume they prefer women to sheep! (Actions speak louder than words...)
