Vicki, to me it's like a taco truck in a free standing building. Very authentic, very inexpensive, nothing fancy, just really, really good! I love their Tacos al Pastor (pork & pineapple, cilantro and onions) for just $2.00 a taco! They are owned by Bandido's, which has several locations in the Triangle as well and is local. In Hope Valley in Durham Chubby's and Bandido's are in the same strip mall!

My quick "take" of the thread title to my eyes was "North Raleigh Guy's a Chubby". I'd never heard of Chubby's Taco; guess I'll have to try it sometime.
Is this like the western states' TACO JOHN'S? Is it real Mexican cuisine or re-constituted beef-is-beef parts with melted velveeta cheese?
I do enjoy the taco wagons as they are generally authentic.
