Authentic Sichuan/Szechuan - Super Wok is good; Gourmet Kingdom in Carrboro is better. Gourmet Kingdom used to be a bad buffet, but it's changed owners/chefs.
Mexican - La Vaquita, Durham (but there are a lot of good, authentic Mexican places around)
Indian - I go to Sitar in Durham a lot but mainly because it's close by. It's good - I suspect Cary has the best places just because Cary has the most places?
Cuban - we don't have a lot of choices. Havana Grill in Cary is decent. A new place is opening in downtown Durham called Old Havana and they're going to focus on Cuban sandwiches, with some side items.
Salvadorean - I can't list it as a favorite only because I haven't been there yet. I heard it's good though - El Cuscatleco, Durham
This is a great area for foodies. I've gotten a lot of recs from chowhound.
Add Tonali in Durham to the list of great Mexican along the lines of Dos Perros. I love that place!
As for local cuisines, I have loved Backyard BBQ in Durham and Mama Dips in Chapel Hill.
OP, Durham is considered a foodie town and has been featured in many national articles. Its offerings won't be as numerous and global as a major international city like LA, but it's certainly a stand-out among towns its size.
Seconding Mami Nora's in Raleigh for Peruvian. A co-worker that lived in Peru for a while vouches for it, and it's very good. I do wish they'd mop the floor sometime though, it's kinda sticky. There is also a Peruvian place in Clayton called The Lucky Chicken. It offers a bigger variety of dishes than Mami Nora's, though it's a much smaller place.
There is an Ethopian place called Abyssinian in Raleigh near NCSU. Been there once several years ago, never again. Extremely slow service with the place nearly empty, and I really did not like the food. I don't know enough about Ethopian cuisine to tell if the meal was poorly made or if I simply don't care for that type of food.
I'll second El Cuscat in Durham for papusas and others. Very good place. They have two locations now, too, and offer $1.50 margaritas on Mondays.
