re: Fort Fisher... are there concessions there? If we go for the day do we have to take our own food/drinks? or plan to take a lunch break and drive somewhere to get some lunch?

No concessions at Fort Fisher. Fill yourself a big cooler of drinks and food and relax for the day.

Something I love to do when down in Kure Beach/Ft. Fischer is take the ferry to Southport. A great place for lunch is Provision Company - Southport Waterfront Restaurant which is by their downtown. Wonderful no frills waterfront place with excellent seafood for a fair price. Just drive your car onto the ferry (small fee each way) and when you get off just follow the signs to downtown Southport. Be sure to check the return ferry times or just take the long way thru Holden and Topsail to I-40 if you're returning to the Triangle that day.

Any suggestions for staying overnight or couple of nights around TopSail or Kure Beach or even around Wilmington? I have been there in Wrightville beach but do not see any rental, hotel or motels.

I don't know what quality you are looking for but we stayed at the Breezeway Motel in Topsail last summer. It is in a quiet area, the beach is not crowded. It is on the sound, but only a short walk to the beach and there are a few restaurants and shops w/in walking distance also. The motel has a pool and a place to hose off but no proper outdoor shower.

I called before we went and they said it was fine to park in their lot early in the day so we could hit the beach before the noon check in. We only stayed saturday night and it was quiet/not crowded.

The room itself is adequate, nothing fancy AT ALL. It was clean but a chair was broken and I think there was a loose tile in the bathroom. It was clear the older couple who owned it weren't going to fix either. That said, I really needed it to be economical and we spent our time at the beach, not in the room. I would stay there again, but I plan to hit many many beaches so I won't be back at topsail this year.
