Hubby went to Refectory, Durham, 15-501, the other day and their pastry chef makes their gluten free bread, came back raving about salmon burgers.

Also near you is http://www.littlehennc.com/ which is a favorite of mine. They don't have a GF menu but they will accommodate if you tell them in advance.

Love the gluten free arepas at Guasaca on Lake Boone. Plan on making my own and forgo the wheat breads altogether.

I have wondered about them and if they are truly GF. When asked about it they advised they could not guarantee and would have to consult the manufacturer.

I have heard claims that pre-cooked white corn flour was gluten free...buy I'm not positive about that either.

Dos Perros in Durham converted their entire kitchen to gluten free a few months ago. You can still get wheat tortillas for things like burritos. They store those separately. Not sure how they make their way into the kitchen if it's gluten free, though.
