I don't think the average American would actually eat most authentic Chinese food in China.

There are a tonne of sit-down Chinese restaurants in the Triangle. Not all good, not all 'authentic' (whatever that means), but there are loads.

Yes, check out C&T Wok in Morrisville. Very authentic. We have Chinese friends and when their parents come to visit (they were born in China and eat only Chinese food even at home) this is where they demand we go.
