Is there another state you could move to with easier transfer requirements or is there some reason it MUST be NC?

She mentioned earlier that NJ doesn't have reciprocity with any other state. So she'd have to take the bar again to practice in any other state.

Other states might offer it more often, though.

No. The bar exam is given only twice a year in the US in July and February. In addition, some states have reciprocity, which means that a person can petition to be admitted to practice, if they are in good standing in their home state and have practiced for a set number of years. For the OP, since NJ does not have reciprocity, he has no choice but to sit for the NC bar. Most likely, it is too late for the July exam.

I would suggest to the OP to check some of the E-discovery and document review places. Usually, they want bar admission in any state.
