Where are you dp? I can think of some places that _might_ have it, but I don't know if they're near you. A google of Caponata and Raleigh returns several restaurants that serve it. You might be able to pick it up to go?
Fairly easy to make -- I've made it quite a few times & it always turned out well!!
Almost every town in Italy has it's own recipe for caponata -- some with only a few ingredients and others with many. My preferred recipe is in "many ingredients" category. As jersey919 says, it is easy to make but there is a lot of slicing and dicing, so it is a time-consuming kitchen project.
Suggestion: if you make it at home, use the long slim Asian eggplants because they have much less seedy mass and no bitterness. In summer, grow your own. In winter, buy at an ethnic market such as Grand Asia on Buck Jones Road.

An old thread but new news. Trader Joe's in Cary has a large display of cans containing "Greek Style Eggplant with tomatoes and onions." That's not exactly caponata but it comes close.
