I can't help with the two builders, but pay attention to the amount of money the builders provide for various items. It is really easy for a builder to low-ball a price on a house and then have the home buyer pay to upgrade much/most of the items going into the house. What are considered the "base" install for items like faucets, HVAC, range tops, ovens, microwaves, shingles, wiring, insulation? How much are they setting aside for lights, fixtures, brick, tile, hardwoods, carpeting, etc.? Do you or the builder already have an architectural specification on the house you are building? Do you want to have a whole-house vacuum, alarm system, wiring closet/smart home, water softener? It can be easier to do all of this when you are building vs. adding in later.
Even if the builder doesn't try to low-ball the price, you will likely find yourself going over the allotments. I've always heard people building should expect to spend an extra 20% to cover some of these "incidentals". We didn't go over by that much when we built, but we also spec'ed out a lot of stuff up-front and had that included in the initial price of the home.
