Green Hatch chile is actually harvested from mid july until 2 weeks into october.
There is a Hatch website to order hatch from if you want whole peppers.
There are also a few websites that sell hatch chile in the powder. I usually
order mine through Diaz Farms in southern new mexico. My husband grew up
in Alamogordo, so he likes the southern red hatch over the northern. Yes the northern
is more red than brownish.
Im seeking to get a bushel of the green when they are fresh fire roasted.

I'll find out from HT within a few days. It's usually July or August, depending on the harvest.

PS HT does a really nice job with this event. Last year, I called them in advance and asked if they could roast some poblano peppers for me. The produce manager said he would check with the roaster (outsourced, I guess) and call me back. He called me back about an hour later to say yes, they could do some roast some poblanos for me, but I would have to buy 5 pounds. I ordered 10 pounds and offered up my credit card number. Once he got over his shock, he said no cc needed, j7st name and phone number in case there was a problem.

Took me four days to peel and freeze the 10 lbs of poblano, 10 lbs of medium hatch and 5 lbs of hot hatch. I still have a little left, so I'll have to take an inventory.

Our freezer has been out of hatches for quite a few months. Our local HT usually has a few crates and I'll swear that I buy most of them.

I got lucky with Hatch chiles this year. My local HT had a big bin of them - not roasted - I bought a bunch, and they couldn't find the code in the system, so after fruitless searching by two employees the manager just gave them to me.

Then I found some roasted ones at Fresh Market.

Thanks JK for turning us on to the Hatch chiles!
